Summer’s Best Lemon-Garlic Dressing


Yum! Cool, crisp, good for you salads that snap in your mouth when you bite into them. Sounds like the perfect remedy for those hot soupy summer days that are on their way?   But who needs or wants gloppy store bought dressing filled with so many ingredients and preservatives to mess it up.  Not me!  That is why I am such a fan of this bright lemony dressing.  It is slightly sweet but robust with a hint of heat from the garlic and onion which adds body to the dressing.  I feel proud of my self every time  I use it because I know that I am doing something good for myself and my family.  Guests usually join me in the kitchen and are so surprised and ask, “You make your own dressing?” Yet it is over and done with in minuets.  So why not try it on several different salads: greens, carrot and apple, fresh veggie slaw, or on veggies like asparagus? Sooooooooooo, for real, what is in your dressing?

Summer’s Best Lemon-Garlic Dressing: Ingredients

(adapted from “The Gerson Therapy”)

1 T. lemon juice

2 T.  Water

1T. xylitol (brown sugar is used in the original recipe)

2 T.  diced onion,

3 clove garlic sliced,

¼ tsp. Chives or other dried herbs

Salt and Pepper to taste

Here is how I do it.

I use a small 1 ½ cup processor because it make quick work other wise mince garlic and onion.

Thinly slice cloves of garlic.  Add to processor.

Dice about 2 T. onion.  Add to processor.

Squeeze lemon juice  but if bottled is available it will do but is not preferred.  Add to processor.

Add xylitol to processor. 

Blend  for about  20 seconds or until think and almost creamy

Add about ½ tsp. Dried or fresh herbs sitr. I use dried chives because I always have them on hand.
