No Fuss Zuccini Frittata

Some mornings my Rhode Island Reds lay their brown eggs on my porch so I am always excited to try a new egg dish.  This zucchini frittata is great for breakfast, lunch or dinner and is egg-tra-ordinary when topped with salsa .  My recipe isn’t so much a recipe as it is a method.  In just a few minuets I can slice, sauté and add just about anything I have left over at the end of the week.  Who doesn’t want to feel good about using up leftovers rather than throwing them away and these days who doesn’t love saving money and eating healthy. This recipe is such a staple in our home that when rushed for time we have been known to take it with us in a wrap when heading out the door.  And even if you don’t have hens of your own a dozen eggs an cost as little as a dollar when there are on sale. What do you like in your egg dishes?

Here is what I used:

3 T olive oil

8 large or 10 regular eggs cracked opened and placed into a large bowel

one small zucchini sliced very thin

1/2 large onion peeled, cut in half then sliced thin

1/2 bell green bell pepper sliced thin

one hand full of grape tomatoes  (about 8) cut in half length wise

1/2 cup milk

1/2 cup cheese of choice such as cheddar or mozzarella shredded

4 dashes season salt, 2 dashes pepper and garlic power or to taste for veggies 

4 dashes season salt, 2 dashes pepper and garlic power or to taste and 1/2 teaspoon dried herb such as chives for egg mixer

Here is how I did it:

Heat oil in a medium sized skillet on medium until hot.

Add bell peepers, onion and spices stir and heat about 2-3 minuets. Add zucchini  stir and continue to sauté about 2-3 minuets or until mixture is tender.  Add sliced grape tomatoes and stir. Remove from heat and set aside.

Here is how I do it:

Preheat oven to 350

Add milk and spices to large bowl of eggs

Using a hand mixer or a sturdy wire whisk beat eggs until color is even.  I like to beat them either way for about two minuets.

Then add cheese and stir to blend.

Using a spatula add sautéed veggie mix to eggs stir to blend

Place mixture into a frittata 10″ dish sprayed with pam

Bake at 350 for about 30-40 minuets or until done in center.

Hint:  Sometimes I pull cooked edges away from the edge and gently stir towards the center about 10 minuets after cooking to help bake evenly but remember this may add cooking time.
