Tender sautéed mushrooms and onion drenched it a sweet marsala reduction infused with fresh ground turkey and spices. What could be better than that? Only a slice of crispy prosciutto topped with additional mushrooms and onions could improve a burger this decadent.
Heat marsala in a tall soup pot until barely simmering until it reduces remove from heat and allow to cool slightly. Meanwhile, slice a few mushrooms and onions for topping and sauté in 1 T. oil until tender and remove. Then dice mushrooms and onions in about 2 T. olive oil, add half of dry spices and sauté until very tender over medium heat remove from heat and allow to cool slightly.
Gently Combined turkey, marsala, diced mushroom and onion mix additional reserved spices. Heat 2T.olive oil in a large skillet on medium heat. Use a 1/3 C. measuring cup to scoop out turkey mix to form a patty press gently to flatten slightly. Cook on each side about 5 minutes or until done. Meanwhile, microwave prosciutto about 15-30 seconds. Assemble burgers!
What you will need:
1 lb. ground turkey
3 c. sweet marsala wine reduced to ½-3/4 c.
16 oz. mushrooms diced (reserve some sliced for topping)
2 c. diced onion (reserve some sliced for topping)
3-6 T. Olive oil for sautéing
I slice prosciutto per burger heated for a few seconds in microwave
6pinches black pepper divided
1/4 t. garlic powder divide
1/2 t. season salt divided
3 springs thyme leaves
